That the records of your education still show the previous names of your parents does not mean that the records are invalid, especially when both names can be connected through the Gazette notification. In case you do not want to correct your own records at present to avoid confusion while getting recruited or verified, you must keep the Gazette notification, publication in newspapers, identity cards before and after the correction, and any other document which shows that both names belong to the same individuals. You can then produce these documents to clear the discrepancy whenever needed in connection with government recruitment or verification. When in the future some authorities demand consistency of the records, you can correct your documents accordingly.

There is no Indian law that forces you to immediately update your parents' names in your ID or educational records just because they changed theirs. Under the Registration of Births and Deaths Act, 196, Aadhaar Regulations, 2016, and board/exam rules, updates are done only when required with proper documents.
If any mismatch comes up, you can explain it by submitting your parents' Gazette notification and other ID proofs showing that both names refer to the same people.
